SARRO'S PEPPER & SALSA CHICKEN
Pepper & Salsa Chicken with Colby Cheese Olive Focaccia
5 thin strips of pepper chicken breast
1 teaspoon salsa, low sodium
2 teaspoons grated Colby cheese
1 cup cut string beans, frozen
1 cup cut broccoli, frozen
Olive focaccia - 3 inch length piece
1 cup fresh garden salad
¼ cup fresh orange pepper
¼ cup black beans
Olive oil cooking spray
Slice olive focaccia in half, horizontally. Coat with olive oil cooking
spray, sprinkle with one teaspoon cheese and toast for 2-4 minutes.
Cut cooked chicken breast into 5 thin strips. Top with salsa and sprinkle with one teaspoon cheese. Heat until cheese is melted. A side fresh garden salad topped with cut fresh orange peppers and black beans completes the meal. Enjoy!
